  • 1/3 cup brown sugar (packed)
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon pure vanilla extract
  • 1 large egg
  • 1/3 cup + 1 tablespoon milk
  • 1 (9-inch) store-bought pumpkin pie (premade/storebought)
  • 12 ounces unsalted butter (softened, 3 sticks)
  • 5 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • 34 tablespoons heavy whipping cream (cold)

Instructions

  1. Prepare the cheesecake layer by mixing softened cream cheese with sugar until smooth. Gradually add flour, vanilla, cinnamon, heavy cream, and eggs.
  2. Bake the cheesecake in a greased round pan at 325°F (163°C) for about 45 minutes until set but slightly jiggly in the center. Cool completely.
  3. For the spice cake layer, combine dry ingredients in one bowl and mix butter with sugar in another until fluffy. Add oil, egg, milk, then blend in dry ingredients.
  4. Bake the spice cake in a greased round pan at 350°F (175°C) for 25-30 minutes until a toothpick comes out clean. Cool completely.
  5. Assemble by layering the pumpkin pie on the bottom, followed by the spice cake and cooled cheesecake.
  6. To make frosting, beat softened butter with powdered sugar and vanilla until creamy; add cold heavy cream to reach desired consistency.
