  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa thoroughly and combine it with water in a medium saucepan. Bring to a boil, then reduce heat to low and simmer for about 15 minutes until fluffy. Allow cooling.
  2. In a large bowl, mix cooled quinoa with diced red bell pepper, cucumber, shredded carrots, green onions, cilantro, chopped peanuts, and sesame seeds.
  3. In a separate small bowl, whisk together soy sauce, lime juice, honey, sesame oil, ginger, garlic, salt, and pepper to create the dressing.
