  • 1 cup uncooked white rice
  • 2 cups chicken broth or water
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 2 tablespoons olive oil
  • To taste salt and pepper
  • Optional: Fresh cilantro, lime wedges

Instructions

  1. Rinse the uncooked rice under cold water until clear. In a pot, combine rice with chicken broth or water. Bring to a boil, then cover and simmer on low for 15-20 minutes until tender.
  2. In a skillet over medium-high heat, heat olive oil. Add ground beef or turkey and cook until browned. Stir in taco seasoning along with salt and pepper; cook for another minute.
