  • 10 mini pumpkins
  • 1 lb ground beef
  • 1 can (15 oz) pumpkin puree
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 6 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp pumpkin pie spice
  • 1/2 tbsp fresh thyme
  • 1/2 tbsp fresh oregano
  • 1/2 tbsp fresh sage

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse mini pumpkins, cut off the tops, and scoop out seeds and pulp.
  3. In a pan, heat 3 tablespoons olive oil over medium heat; sauté onion and garlic until fragrant (3-5 minutes).
  4. In a bowl, mix sautéed onion and garlic with ground beef, pumpkin puree, spices, salt, and pepper.
  5. Grease a baking dish with remaining olive oil. Fill each pumpkin with the stuffing mixture.
  6. Roast in the oven for 30-35 minutes until tender.
