  • 1/4 cup (50 g) granulated white sugar
  • 2 3/4 cups (344 g) all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (200 g) granulated white sugar
  • 1 cup (227 g) unsalted butter, very softened
  • 1 egg, at room temperature
  • 2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar, for rolling dough in

Instructions

  1. Prepare the cheesecake filling by beating cold cream cheese, sugar, and vanilla until smooth.
  2. Mix diced strawberries with sugar and let sit for 10 minutes to achieve a jammy texture.
  3. In a separate bowl, cream softened butter with sugar until fluffy. Add egg and vanilla, mixing well.
  4. Combine dry ingredients (flour, baking powder, baking soda) and gradually mix into wet ingredients until just combined.
  5. For assembly, flatten cookie dough, add cheesecake filling and strawberry mixture, then wrap dough around it to form a ball.
  6. Bake at 350°F (175°C) for 11 minutes until golden around the edges but still soft in the center.
