  • 2 ribeye or sirloin steaks (8 oz each)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/2 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 1 tablespoon fresh oregano (or basil)
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 2 large sweet potatoes
  • 1/4 cup unsalted butter (or olive oil)

Instructions

  1. Boil peeled sweet potato chunks in water until fork-tender, about 15-20 minutes.
  2. While potatoes cook, heat olive oil in a skillet over medium-high heat. Season steaks with salt, pepper, and garlic powder; cook for 4-5 minutes per side for medium-rare.
  3. For the green sauce, blend parsley, cilantro, oregano or basil, lemon juice, olive oil, minced garlic, salt, and pepper until smooth.
  4. Drain sweet potatoes and return them to the pot. Add butter (or olive oil), mash until creamy; season with salt and pepper.
  5. Serve steaks next to mashed sweet potatoes and drizzle green sauce over both.
