  • 4 salmon fillets (or 1 lb salmon, cut into cubes)
  • 3 tbsp sriracha sauce
  • 2 tbsp honey
  • 2 tbsp soy sauce (low sodium preferred)
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • 2 cups cooked jasmine rice
  • 2 cups cauliflower florets
  • Olive oil, salt, and pepper for seasoning

Instructions

  1. Whisk together sriracha sauce, honey, soy sauce, minced garlic, lime juice, and sesame oil to create the marinade.
  2. Marinate the salmon for about 15 minutes in half the marinade.
  3. Preheat the oven to 400°F (200°C). Toss cauliflower with olive oil, salt, and pepper; roast on a baking sheet for 20-25 minutes until golden brown.
  4. In a skillet over medium-high heat, sear the marinated salmon for about 2-3 minutes per side until golden brown.
  5. Pour the reserved marinade over the salmon and let it bubble for 1-2 minutes to create a glaze.
  6. Assemble bowls by dividing rice and topping with roasted cauliflower and glazed salmon.
