  • 1 cup red lentils
  • 4 tbsp avocado oil or olive oil
  • 4 cloves garlic, minced
  • 2-inch piece of ginger, minced
  • 2 serrano peppers, minced
  • 1 tsp ground cumin
  • 1 tsp cayenne pepper
  • ½ tsp ground coriander
  • 2 tsp curry powder
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 1 can coconut milk (13.5 oz)
  • 1 can crushed tomatoes (14 oz)
  • 1 tbsp lemon juice
  • Fresh cilantro for garnish

Instructions

  1. Rinse lentils until water runs clear; soak for at least 6 hours.
  2. In a skillet over medium-high heat, add oil and sauté garlic, ginger, and serrano peppers for about 3 minutes.
  3. Stir in spices and cook for an additional 30–60 seconds until aromatic.
  4. Add rinsed lentils, crushed tomatoes, and coconut milk; stir well.
  5. Reduce heat; simmer covered for 20–25 minutes until lentils are tender.
  6. Finish with lemon juice and chopped cilantro before serving.
