  • 1 ripe avocado
  • 4 slices cooked turkey bacon
  • 2 slices pepper jack cheese
  • ¼ cup pickled jalapeños
  • 2 brioche buns
  • ¼ cup mayonnaise
  • 1 tbsp adobo sauce
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Pound chicken breasts for even thickness. Rub with olive oil and season with smoked paprika, garlic powder, cayenne, salt, and pepper.
  2. Grill chicken over medium-high heat for 4–5 minutes per side until cooked through (165°F/74°C). Add cheese in the last minute to melt.
  3. Mix mayonnaise, adobo sauce, and lime juice for chipotle mayo.
  4. Toast brioche buns until golden brown.
  5. Assemble by spreading chipotle mayo on buns; layer with avocado, grilled chicken, turkey bacon, and jalapeños.
