  • 3 tbsp toasted sesame oil
  • 3.5 ounces shiitake mushrooms
  • 4 garlic cloves
  • 1 tbsp grated ginger
  • 4 cups chicken or vegetable broth
  • ½ tsp ground turmeric
  • 2 tbsp low sodium soy sauce
  • 1 can (14 oz) unsweetened coconut milk
  • 9 ounces instant ramen noodles
  • Lime juice for garnish

Instructions

  1. Prepare ingredients by grating garlic and ginger, and tearing shiitake mushrooms.
  2. In a large pot over medium heat, add 1 tablespoon of sesame oil and sauté the shiitakes until browned. Remove and set aside.
  3. Lower the heat and add another tablespoon of sesame oil along with garlic and ginger, sautéing until fragrant.
  4. Deglaze the pot with chicken or vegetable broth, then stir in turmeric, soy sauce, coconut milk, lime juice, and return to a boil.
  5. Add ramen noodles directly into the broth and cook until tender.
  6. Serve hot topped with crispy mushrooms, sesame seeds, chives, and a drizzle of chili oil if desired.
