  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1/4 cup breadcrumbs (or panko for extra crunch)
  • 1 egg
  • 1/2 cup mayonnaise
  • 1 chipotle pepper in adobo sauce, finely chopped
  • 1 tablespoon lime juice
  • 4 burger buns, toasted
  • 4 slices of pepper jack cheese (optional)
  • Lettuce leaves
  • Sliced tomatoes
  • Sliced red onions
  • Pickled jalapeños (optional)

Instructions

  1. In a large bowl, combine ground chicken, chopped chipotle peppers, adobo sauce, smoked paprika, lime juice, and seasonings. Mix gently and form into four patties.
  2. Grill over medium-high heat for about 5 minutes per side until fully cooked (165°F internal temperature) or cook in a skillet over medium heat until golden brown.
  3. For the chipotle mayo, mix mayonnaise with one chopped chipotle pepper and lime juice in a small bowl.
  4. Assemble by spreading chipotle mayo on toasted buns and layering with lettuce, tomato, onion, and cooked patties.
