  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1/4 cup breadcrumbs (or panko for extra crunch)
  • 1 egg
  • 1/2 cup mayonnaise
  • 1 chipotle pepper in adobo sauce, finely chopped
  • 1 tablespoon lime juice
  • Salt to taste
  • 4 burger buns, toasted
  • 4 slices of pepper jack cheese (optional, for extra heat)
  • Lettuce leaves
  • Sliced tomatoes
  • Sliced red onions
  • Pickled jalapeños (optional, for extra spice)

Instructions

  1. In a large bowl, mix ground chicken, chopped chipotle peppers, adobo sauce, spices, lime juice, breadcrumbs, and egg until well combined. Form into four patties.
  2. Preheat grill or skillet over medium-high heat. Cook patties for about 5-6 minutes on each side until fully cooked through (internal temperature should reach 165°F / 75°C).
  3. For the sauce, combine mayonnaise with finely chopped chipotle pepper, lime juice, garlic powder, and salt to taste.
  4. Toast burger buns and assemble with sauce, cooked patty, lettuce, tomatoes, onions, and optional pickled jalapeños.
