  • 1 1/2 cups flour (gluten-free option available)
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • For the Frosting: reduced-fat cream cheese, icing sugar, lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 inch baking pan by greasing it or lining it with parchment paper.
  2. In a large bowl, mix together the beaten eggs, brown sugar, canola oil, honey, and vanilla until smooth.
