  • 3 boneless skinless chicken breasts (cut into cutlets)
  • 12 ounces mushrooms (thick sliced)
  • ½ cup all-purpose flour
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 garlic cloves (minced)
  • 2 large shallots (thinly sliced)
  • ½ cup dry white grape juice
  • 1 ½ cups low sodium chicken broth
  • ½ cup heavy cream
  • Fresh thyme sprigs

Instructions

  1. Pat chicken breasts dry and cut them into thinner cutlets. Season flour with salt, pepper, and garlic powder.
  2. In a skillet, melt 2 tablespoons butter and olive oil over medium heat. Dredge chicken in the seasoned flour and cook until golden brown, about 8 minutes per batch. Set aside.
  3. Add remaining butter to the skillet, sauté mushrooms until browned. Add shallots and garlic; cook until fragrant.
