  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon honey or maple syrup
  • 1/4 cup mayonnaise (or Greek yogurt)
  • 1 tablespoon sriracha
  • 2 cups cooked white or brown rice (or quinoa)
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1/2 cup sliced radishes
  • 1 avocado, sliced
  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds (optional)
  • 1 tablespoon chopped cilantro (optional)

Instructions

  1. In a small bowl, mix mayonnaise, sriracha, lime juice, and soy sauce to create the spicy mayo.
  2. Marinate shrimp in soy sauce, olive oil, honey or maple syrup, garlic powder, smoked paprika, black pepper, and optional red pepper flakes for about 10 minutes.
  3. Cook marinated shrimp in a skillet over medium-high heat for 2-3 minutes on each side until pink and opaque.
  4. Assemble bowls by placing rice at the bottom and adding shrimp along with your choice of shredded carrots, sliced cucumbers, radishes, avocado slices, and green onions.
  5. Drizzle generously with spicy mayo and enjoy!
