  • ¾ cup shredded mozzarella cheese
  • â…“ cup chopped sun-dried tomatoes (drained)
  • ¼ cup fresh basil (chopped)

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×4-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together eggs, milk, olive oil, and yogurt until smooth.
  3. In another bowl, combine flour, baking powder, salt, and garlic powder.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined. Fold in mozzarella, sun-dried tomatoes, and basil.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 40–45 minutes until golden brown; a toothpick inserted should come out clean.
  7. Allow cooling for about 10 minutes before slicing.
