  • 1 pound turkey sausage (mild or hot)
  • 5 tablespoons unsalted butter (divided)
  • 21/4 cups mirepoix (or 3/4 cup each: diced carrots, celery, and onion)
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 3 cups milk
  • 2 cups shredded extra-sharp Cheddar cheese
  • 1 teaspoon minced garlic
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. In a large pot over medium-high heat, cook the turkey sausage until browned. Remove and set aside.
  2. In the same pot, melt 1 tablespoon of butter and sauté mirepoix for about 5–7 minutes. Add minced garlic and cook for another 30 seconds.
  3. Stir in chopped potatoes, dried basil, parsley, salt, and pepper. Pour in chicken stock; bring to a boil then simmer until potatoes are fork-tender (15–20 minutes).
  4. In another pot, melt remaining butter and whisk in flour to create a roux. Gradually add milk while stirring until thickened; mix in heavy cream.
  5. Combine the creamy mixture with the potato soup; stir in shredded cheese and cooked sausage until melted and smooth.
