  • ⅔ cup light brown sugar
  • ¾ cup cocoa powder
  • 1 cup sour cream
  • ⅓ cup buttermilk (homemade with vinegar)
  • 5 tbsp unsalted butter
  • 200g dark chocolate
  • Sea salt (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease cake pans.
  2. In one bowl, whisk together flour, baking powder, baking soda, sugars, cocoa powder, and salt.
  3. In another bowl, combine eggs, vegetable oil, buttermilk mixture, sour cream, and instant coffee; mix into dry ingredients until just combined.
  4. Gradually stir in boiling water; batter will be thin.
  5. Pour batter into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Cool completely before removing from pans.
  6. Prepare salted caramel sauce by melting sugar until golden brown; stir in warmed heavy cream and butter until smooth.
  7. For frosting, melt dark chocolate with unsalted butter; mix in warm heavy cream until smooth.
  8. Assemble the cake by layering salted caramel sauce between cake layers and topping with frosting.
