  • 1 cup granulated sugar
  • 3 large eggs
  • 3 cups peeled and sliced apples
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp all-purpose flour
  • 1 cup granulated sugar (for caramel)
  • 6 tbsp unsalted butter (for caramel)
  • 1/2 cup heavy cream (for caramel)
  • 1 tsp sea salt (for caramel)

Instructions

  1. Preheat oven to 325°F (163°C). Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a springform pan.
  2. Bake the crust for about 10 minutes until lightly golden. Let cool completely.
  3. Toss sliced apples with brown sugar, cinnamon, and flour; spread over the cooled crust.
  4. Beat cream cheese and granulated sugar until smooth. Add eggs one at a time, then stir in vanilla and sour cream.
  5. Pour cheesecake mixture over apples and bake for 60-70 minutes until slightly jiggly in the center. Cool completely before refrigerating for at least 4 hours.
  6. For salted caramel, melt sugar in a saucepan until amber-colored. Stir in butter and gradually add heavy cream while stirring. Mix in sea salt.
  7. Drizzle caramel over chilled cheesecake before serving.
