  • 9 Roma tomatoes
  • 3 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 1 yellow onion
  • 4 garlic cloves
  • 1 tbsp fresh thyme
  • 1 tsp Kosher salt
  • ½ tsp ground black pepper
  • 1 cup fresh basil
  • 1 can (28 oz) crushed San Marzano tomatoes
  • 2 cups chicken stock
  • 2/3 cup heavy cream
  • 1 tbsp sugar

Instructions

  1. Preheat oven to 375°F. Place sliced Roma tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 25 minutes.
  2. In a large pot, heat butter and sauté diced onion over medium-high heat until translucent (about 5 minutes). Add minced garlic, thyme, salt, and pepper; cook for another minute.
  3. Stir in crushed tomatoes, fresh basil, and sugar. Simmer on low heat for about 10 minutes.
  4. Add roasted tomatoes and chicken stock to the pot; simmer gently for an additional 30 minutes.
  5. Blend the soup until smooth using an immersion blender or regular blender.
  6. Stir in heavy cream, then serve hot with optional mini croutons.
