  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. In a bowl, mix olive oil, minced garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, salt, and pepper to create a marinade.
  2. Coat the chicken in the marinade thoroughly and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Place the marinated chicken in a roasting pan with quartered onions and pour in chicken broth.
  5. Roast for about 1 hour and 15 minutes until the internal temperature reaches 165°F (75°C), basting occasionally.
  6. Let rest for 10 minutes before carving and serve with your favorite sides.
