- 1 whole chicken (4–5 pounds)
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- Zest and juice of 2 large oranges
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1 small onion, quartered
- 1 cup chicken broth
- In a bowl, mix olive oil, minced garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, salt, and pepper to create a marinade.
- Coat the chicken in the marinade thoroughly and refrigerate for at least 30 minutes.
- Preheat the oven to 375°F (190°C).
- Place the marinated chicken in a roasting pan with quartered onions and pour in chicken broth.
- Roast for about 1 hour and 15 minutes until the internal temperature reaches 165°F (75°C), basting occasionally.
- Let rest for 10 minutes before carving and serve with your favorite sides.
