  • 89 medium starchy potatoes, thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated parmesan cheese
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for about 30 minutes until soft.
  2. Grease a 9×13-inch baking dish with butter.
  3. Thinly slice the potatoes; layer them upright in the baking dish.
  4. In a saucepan over medium heat, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper; stir until melted.
  5. Squeeze roasted garlic cloves into a bowl; mash into a paste and mix into the creamy mixture.
  6. Pour the creamy mixture over potato layers; cover with foil and bake for 40 minutes.
  7. Remove foil, sprinkle remaining cheeses on top and bake uncovered for an additional 30 minutes until golden brown.
