  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic, cut the top off
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter, plus more for greasing the baking dish
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated parmesan cheese, divided
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for about 30 minutes.
  2. Grease a 9×13-inch baking dish with butter.
  3. Thinly slice potatoes using a mandoline slicer and layer them upright in the baking dish.
  4. In a saucepan over medium heat, combine heavy cream, milk, butter, half the parmesan cheese, thyme, nutmeg, salt, and pepper; heat gently until blended.
  5. Squeeze roasted garlic into a bowl and mash it; mix into the creamy sauce.
  6. Pour the sauce over the potato layers and cover tightly with foil.
  7. Bake covered for about 40 minutes; then remove foil and sprinkle remaining cheeses on top.
  8. Bake uncovered for another 30 minutes until bubbly and golden brown. Let it cool slightly before serving.
