  • 1 pound Brussels sprouts (halved)
  • ½ tablespoon extra virgin olive oil
  • 2 tablespoons extra virgin olive oil (for dressing)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon orange juice
  • 2 teaspoons maple syrup
  • 2 teaspoons mustard
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Optionally, line a baking sheet with parchment paper.
  2. Trim the stems of the Brussels sprouts and rinse them under cold water. Pat dry with a kitchen cloth.
  3. Halve each sprout and place them on the baking tray. Toss with ½ tablespoon olive oil, salt, and black pepper.
  4. Roast in a single layer for 20-25 minutes until golden brown and crispy.
  5. While they roast, prepare the dressing by combining the remaining olive oil, apple cider vinegar, orange juice, maple syrup, mustard, salt, and pepper in a jar or bowl. Shake or whisk until blended.
  6. Once cooked, drizzle the dressing over the Brussels sprouts before serving.
