  • 1 tbsp pumpkin pie spice
  • 1/2 cup melted unsalted butter
  • 1 1/4 cups granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup canned pumpkin puree
  • 3/4 cup buttermilk
  • 6 tbsp cold unsalted butter
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin pan with liners.
  2. For the streusel topping: Combine cold butter, brown sugar, flour, and salt in a bowl until crumbly.
  3. In another bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  4. In a separate bowl, mix melted butter with sugar until combined. Add eggs one at a time, then mix in vanilla and pumpkin puree. Stir in buttermilk until just combined.
  5. Gently fold the wet mixture into the dry ingredients; do not overmix.
  6. Fill muffin cups two-thirds full with batter and sprinkle with streusel topping.
