  • 1/2 cup packed light brown sugar
  • 1 1/4 cups canned pumpkin puree
  • 1 large egg (room temperature)
  • 8 ounces cream cheese (softened but still cool)
  • 1/4 cup unsalted butter (softened but still cool)
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups confectioners' sugar (sifted)

Instructions

  1. Preheat your oven to 350° F and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. Beat butter and sugars until fluffy, then mix in pumpkin puree, egg, and vanilla extract.
  4. Combine wet and dry ingredients until just mixed; do not overmix.
  5. Scoop dough onto the prepared baking sheet, spacing them two inches apart.
  6. Bake for 13 to 15 minutes until edges are set but centers are soft.
  7. Allow cookies to cool before preparing the cream cheese frosting by beating softened cream cheese and butter until smooth; add vanilla extract and sifted confectioners' sugar until well combined.
  8. Frost cooled cookies generously with cream cheese frosting.
