  • 1/3 cup white chocolate chips
  • Granulated sugar for rolling

  1. Combine butter, cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice in a skillet over medium heat. Stir until thickened.
  2. Mix in graham cracker crumbs and white chocolate chips until smooth. Add food coloring if desired.
  3. Refrigerate mixture on a greased baking sheet until firm (about 2 hours).
  4. Roll chilled mixture into small balls using buttered hands.
  5. Roll each ball in granulated sugar to coat.
  6. Decorate with chocolate chips and serve or refrigerate until ready.
