  • 4 tbsp unsalted butter, room temperature
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 13 tsp milk, as needed

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 loaf pan.
  2. In a bowl, whisk together flour, baking soda, spices, and salt.
  3. In another bowl, mix canola oil, sugars, eggs, pumpkin puree, and vanilla until smooth.
  4. Gradually combine dry ingredients with wet ingredients; stir until just mixed.
  5. Pour batter into the prepared pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. While cooling on a wire rack, prepare frosting by beating cream cheese and butter until fluffy; add powdered sugar and milk to reach desired consistency.
