  • 1 ½ cups diced peaches (fresh, canned, or thawed frozen)
  • ½ cup all-purpose flour (for the streusel topping)
  • â…“ cup brown sugar, packed (for the streusel topping)
  • ½ teaspoon ground cinnamon (for the streusel topping)
  • ¼ cup cold unsalted butter, cut into small cubes (for the streusel topping)
  • ½ cup powdered sugar (for optional glaze)
  • 1–2 tablespoons milk or cream (for optional glaze)
  • ¼ teaspoon vanilla extract (for optional glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 or 9×9-inch baking pan by greasing or lining it with parchment paper.
  2. In a small bowl, combine ingredients for the streusel topping and mix until crumbly.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Beat butter with sugars until light and fluffy. Add eggs one at a time, followed by sour cream and vanilla.
  5. Gradually mix in dry ingredients until just combined. Fold in diced peaches gently.
  6. Pour batter into the pan and top with streusel without pressing down.
  7. Bake for 40-50 minutes until golden brown and a toothpick comes out clean.
  8. Cool before slicing; drizzle optional glaze if desired.
