  • 1 medium onion
  • 2 tablespoons avocado oil (or olive oil/melted butter)
  • 1 ½ teaspoons salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper

Instructions

  1. Preheat your oven to 425ºF (218ºC).
  2. Let the chicken sit at room temperature for 30-60 minutes.
  3. Pat the chicken dry and place it breast side up in a roasting pan.
  4. Stuff the cavity with halved onion and optional garlic cloves.
  5. In a bowl, mix avocado oil, salt, spices, and paste together.
  6. Coat the chicken thoroughly with the seasoning mixture.
  7. Roast for 70-90 minutes until the internal temperature reaches at least 165ºF (74ºC), basting occasionally.
  8. Allow the chicken to rest for about 5 minutes before serving.
