  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 cup dry orzo pasta
  • 1 tsp dried thyme
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • juice from ½ lemon
  • ½ cup grated Parmesan
  • freshly ground black pepper (for serving)
  • chili flakes (for serving)

Instructions

  1. Season salmon fillets with garlic powder, sweet paprika, salt, and pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat; sear the salmon for 3-4 minutes per side until golden brown. Remove and set aside.
  3. Sauté chopped onion and minced garlic in the same skillet until fragrant.
  4. Stir in dried thyme and orzo; toast for one minute.
  5. Add chicken broth; bring to a boil then simmer uncovered for about 8 minutes until liquid is absorbed.
  6. Mix in spinach, lemon juice, and Parmesan cheese; stir until spinach wilts.
  7. Return salmon to the skillet; simmer until heated through (2-3 minutes).
