  • 1 lb boneless, skinless chicken breast (cut into bite-sized pieces)
  • 2 tablespoons olive oil
  • 1½ cups long-grain white rice (uncooked)
  • 1 can (10 oz) Rotel diced tomatoes with green chilies (undrained)
  • 2¼ cups chicken broth
  • 1 cup nacho cheese sauce
  • 1½ cups shredded cheddar or Mexican blend cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken pieces along with garlic powder, onion powder, chili powder, cumin, salt, and pepper. Sauté for about 5–6 minutes until mostly cooked through.
  2. Stir in uncooked rice and Rotel; cook for 1–2 minutes.
  3. Add chicken broth; bring to a boil then reduce heat to low. Cover and simmer for 20–25 minutes until rice is tender.
  4. Stir in nacho cheese sauce and shredded cheese until melted and creamy.
  5. Let sit covered for 5 minutes before serving; garnish with desired toppings.
