  • 10 oz. mushrooms (button or baby bella)
  • 2 tablespoons salted butter
  • 2 large boneless skinless chicken breasts
  • Salt and pepper
  • ½ cup all-purpose flour
  • 34 tablespoons olive oil
  • 2 ½ cups beef broth
  • 1 chicken bouillon cube
  • 1 teaspoon soy sauce
  • 3 cloves garlic (minced)
  • ½ cup dry white grape juice
  • 1/3 cup heavy cream

Instructions

  1. Sauté the mushrooms with butter in a skillet until golden brown; season with salt and pepper.
  2. Season chicken breasts with salt and pepper, then dredge in flour.
  3. Sear the chicken in the same skillet until golden brown on both sides, then remove.
  4. In the skillet, combine beef broth, bouillon cube, soy sauce, garlic, grape juice, and reserved mushroom juices; stir to deglaze.
  5. Mix cornstarch with water to create a slurry; whisk into the sauce until thickened.
  6. Stir in heavy cream and return chicken and mushrooms to the skillet; simmer briefly before serving.
