  • 200 g granulated sugar
  • 2 tbsp lemon zest (from 23 large lemons)
  • 270 g almond flour
  • 3 large egg whites (room temperature)
  • 1/4 tsp fine sea salt
  • 1 1/2 tsp pure almond extract
  • 3 tbsp fruit juice or broth (substituting limoncello)
  • 50 g granulated sugar (for rolling)
  • 30 g powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, massage the lemon zest into the granulated sugar until fragrant.
  3. In a large bowl, sift together the almond flour and lemon sugar.
  4. In another bowl, whip egg whites and salt until stiff peaks form.
  5. Gently fold in the almond extract and fruit juice/broth, then gradually incorporate the almond flour mixture until just combined.
  6. Prepare shallow bowls with granulated sugar and powdered sugar for rolling.
  7. Scoop dough into uniform portions using a cookie scoop, roll in sugars, then shape into balls.
  8. Place on the baking sheet, press lightly to create cracks on top, and bake for about 22-25 minutes until golden brown on the bottoms.
  9. Cool completely on a wire rack.
