  • 4 large eggs (separated)
  • 1 cup granulated sugar (divided into 1/3 cup and 2/3 cup)
  • 2 tablespoons cornstarch or sifted cake flour
  • 1 tsp vanilla extract or zest of one lemon
  • A pinch of salt
  • 3/4 cup full-fat yogurt

Instructions

  1. Preheat your oven to 325°F (160°C). Prepare an 8-inch springform pan by lining the bottom with parchment paper.
  2. In a clean bowl, whip egg whites until frothy. Gradually add 1/3 cup sugar and continue whipping until stiff peaks form.
  3. In another bowl, whisk together egg yolks, yogurt, cornstarch, vanilla (or lemon zest), and salt until smooth.
  4. Gently fold in one-third of the whipped egg whites to lighten the mixture, then carefully fold in the remaining egg whites in two parts.
  5. Pour batter into prepared pan and place it in a larger baking tray filled with hot water (bain-marie). Bake for 50–60 minutes or until golden brown.
  6. Once baked, turn off the oven and let the cake rest inside with the door slightly open for about 15 minutes before removing.
