  • 4 sea bass fillets (about 6 oz each)
  • 4 cloves garlic
  • Zest and juice of 1 lemon
  • 6 tbsp unsalted butter
  • Salt and pepper
  • 2 tbsp olive oil
  • 10 oz fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Pat dry the sea bass fillets.
  2. Combine minced garlic, lemon zest, lemon juice, and melted butter in a bowl.
  3. In an oven-safe skillet over medium-high heat, sear the sea bass fillets in olive oil for 2-3 minutes per side. Pour the lemon-garlic mixture over them and transfer to the oven to bake for 8-10 minutes.
  4. Meanwhile, melt butter in another skillet over medium heat. Sauté chopped onion and garlic until softened, then add fresh spinach until wilted. Stir in heavy cream and Parmesan cheese; season to taste.
  5. Serve creamed spinach topped with baked sea bass and garnish with parsley.
