  • 1 egg yolk
  • 1½ cups whole milk
  • ¾ cup granulated sugar
  • 3 large egg yolks
  • ¼ cup cornstarch
  • Zest of 1 lemon
  • ½ cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons unsalted butter

Instructions

  1. Prepare the crust: Mix flour, sugar, and salt in a bowl. Cut in cold butter until crumbly. Add egg yolk and water until dough forms. Press into a tart pan and chill for 20–30 minutes.
  2. Pre-bake the crust: Preheat oven to 350°F (175°C). Prick crust with a fork and bake for 12–15 minutes until golden. Let cool.
  3. Make the custard: Whisk together sugar, cornstarch, lemon zest, and egg yolks in a saucepan over medium heat. Gradually whisk in milk until thickened. Remove from heat; stir in lemon juice, butter, and vanilla.
