  • 1 ¼ lbs boneless skinless chicken breast
  • 1 small yellow onion, diced
  • ¾ cup carrots, diced
  • 2 sticks celery, diced
  • 6 cups chicken broth
  • Juice of 1 lemon (34 tablespoons)
  • 2 cups fresh spinach
  • ¾ cup uncooked orzo

Instructions

  1. Heat olive oil in a pot over medium-high heat. Season chicken with lemon pepper seasoning and sear until golden (3-4 minutes per side). Remove and set aside.
  2. Deglaze the pot with white grape juice, scraping up any browned bits.
  3. Add butter and sauté onions, carrots, and celery until softened (about 5 minutes). Stir in minced garlic for an additional minute.
  4. Add seasonings and chicken broth; bring to boil then reduce to simmer. Return chicken to the pot and cook through.
  5. Cook orzo separately according to package instructions.
  6. Lower heat and stir in heavy cream and Parmesan cheese until melted.
  7. Add fresh spinach and cook until wilted (2-3 minutes).
  8. Finish with freshly squeezed lemon juice before serving over cooked orzo.
