  • 400 grams lean ground beef
  • 1 large egg
  • 100 grams crustless bread
  • 125 ml white grape juice
  • 100 grams minced onion
  • 4 minced garlic cloves
  • ½ teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 teaspoons dried parsley
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground pepper
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 cups hot water or stock (vegetable, beef, or chicken)
  • 810 tablespoons lemon juice

Instructions

  1. In a large bowl, combine both types of ground beef with minced onion, garlic, egg, soaked bread in grape juice, cumin, oregano, parsley, salt, and pepper.
  2. Shape the mixture into small balls (about the size of golf balls) and place them on a baking sheet.
  3. Heat olive oil in a skillet over medium heat and sauté the meatballs until browned on all sides.
  4. Remove the meatballs and make the lemon sauce by melting butter in the same skillet, whisking in flour until smooth. Gradually add hot water or stock until thickened; stir in lemon juice and season with salt and pepper.
  5. Return the meatballs to the skillet and simmer gently in the lemon sauce for about 10 minutes.
