Ingredients

Scale
  • 2 ribeye steaks
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 6 garlic cloves, smashed and minced
  • 1 cup heavy cream
  • 1/4 cup Parmesan cheese, grated
  • 1 teaspoon Dijon mustard
  • Fresh rosemary or thyme
  • Salt and black pepper

Instructions

  1. Pat the ribeye steaks dry and season both sides with salt and black pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the steaks for 3-4 minutes on each side for medium-rare.
  3. During the last minute of cooking, add butter, smashed garlic, and fresh herbs to the skillet, basting the steaks with the melted butter.
  4. Remove steaks from the skillet and let them rest for 5-7 minutes.
  5. In the same skillet, reduce heat to medium and melt remaining butter. Sauté minced garlic until fragrant.
  6. Stir in heavy cream, allowing it to simmer gently before adding Parmesan cheese, Dijon mustard, salt, and pepper. Mix until smooth.
  7. Slice steak against the grain and serve drizzled with creamy garlic sauce.
