  • 1/2 cup plain bread crumbs
  • 1/2 cup fresh grated parmesan cheese
  • 1 egg
  • 1/2 yellow onion (minced)
  • 4 garlic cloves
  • 1 tbsp dried parsley
  • 2 tsp dried basil
  • 1 tsp crushed red pepper flakes (more or less to taste)
  • 1 tsp salt (more or less to taste)
  • 1/2 tsp black pepper (more or less to taste)
  • 2 tbsp olive oil (for cooking)
  • 1/2 yellow onion (diced)
  • 2 medium carrots (diced)
  • 23 tomatoes on a vine (diced)
  • 4 garlic cloves
  • 1 cup water
  • 56 cups beef stock
  • 4 oz tomato paste
  • 1/21 tsp salt (more or less to taste)
  • 1 tsp red pepper flakes (more or less to taste)
  • 1 tbsp dried parsley
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1416 oz gnocchi (homemade or ready-to-use)
  • 1/4 cup fresh grated or shaved parmesan cheese

Instructions

  1. Prepare meatballs: In a mixing bowl, combine ground beef, bread crumbs, grated parmesan, egg, minced onion, garlic, parsley, basil, salt, and pepper. Roll into small balls.
  2. Brown meatballs: Heat olive oil in a pot over medium heat. Brown meatballs on all sides for 5-7 minutes; set aside.
  3. Sauté vegetables: In the same pot, add diced onion, carrots, and garlic; sauté until softened (about 5 minutes).
  4. Build broth: Stir in diced tomatoes, water, beef stock, tomato paste, salt, red pepper flakes, parsley, basil, and oregano. Simmer gently.
  5. Cook gnocchi: Add gnocchi and return meatballs to the pot; cook until gnocchi floats to the surface (3-5 minutes).
  6. Serve: Ladle soup into bowls and top with fresh parmesan cheese.
