  • 1 teaspoon black pepper
  • 2 teaspoons fresh rosemary
  • 1 teaspoon dried thyme
  • 2 each bay leaves
  • Mashed potatoes for serving

Instructions

  1. In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef stew meat until browned on all sides.
  2. Gradually stir in the beef broth to deglaze the pot, scraping up any flavorful bits.
  3. Add the carrots and bay leaves; bring to a boil then reduce heat to medium-low, cover, and simmer for about 45 minutes.
  4. Five minutes before serving, stir in frozen peas and remove bay leaves. Serve hot with generous portions of mashed potatoes.
