  • 2 large eggs
  • 1/2 cup canola or vegetable oil
  • 1/2 cup unsalted butter (room temperature)
  • 2 1/4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 jar vegan marshmallow creme
  • 3/4 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine cake mix, eggs, and oil until a soft dough forms.
  3. Using a medium scoop, drop dough onto baking sheets, spaced 2 inches apart.
  4. Bake for 8-10 minutes until edges are set. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  5. For frosting, beat butter until creamy, then gradually add powdered sugar, vanilla extract, and salt. Fold in vegan marshmallow creme.
  6. For ganache, microwave cream over chocolate chips until melted; whisk until smooth and let cool slightly.
  7. Frost cooled cookies with the marshmallow frosting and drizzle with ganache. Pipe reserved frosting into squiggles on top.
