  • 4 salmon filets (46 oz each)
  • 3 tablespoons low sodium soy sauce (or tamari)
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 1 avocado
  • 2 cups cooked white rice
  • 1 cup cooked edamame
  • 1 cucumber (sliced)
  • Optional: sriracha mayo for drizzling

Instructions

  1. Cut salmon into 1-inch cubes. Optionally remove skin.
  2. Whisk together soy sauce, honey, sriracha, minced garlic, and water in a bowl.
  3. Marinate salmon cubes in the mixture for at least 20 minutes.
  4. Heat oil in a skillet over medium-high heat; cook marinated salmon until golden brown, about 2-3 minutes per side.
  5. Pour remaining marinade into the skillet and cook until thickened.
  6. Assemble bowls starting with rice, topped with salmon, avocado slices, edamame, cucumber, and drizzle with sriracha mayo.
