  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 2 tablespoons finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon ketchup
  • 2 tablespoons water
  • 1 tablespoon olive oil
  • 1/2 cup diced bell peppers
  • 1/2 cup frozen peas
  • 1/4 cup chopped green onions (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a bowl, mix meatball ingredients until combined; form into 1-inch balls.
  3. In a saucepan, heat honey, soy sauce, ketchup, water, and garlic until bubbly.
  4. Spread uncooked rice in the baking dish, add veggies, drizzle with olive oil, pour in chicken broth, nestle meatballs on top, and drizzle sauce over everything.
  5. Cover with foil and bake for 40 minutes; remove foil and bake for an additional 10-15 minutes until golden.
