  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Sear seasoned chicken in a skillet over medium heat for 3–4 minutes on each side until golden brown. Remove from pan.
  3. In the same skillet, mix BBQ sauce, honey, and garlic in a bowl. Set aside.
  4. Toast uncooked rice in the skillet for 1–2 minutes while stirring frequently.
  5. Add chicken broth and half of the BBQ mixture to the skillet; stir well.
  6. Return seared chicken to skillet and pour remaining BBQ mixture over it. Cover and simmer for about 15 minutes.
  7. If using vegetables, add them now, cover again, and cook for an additional 5 minutes until tender.
  8. Let sit off heat for 5 minutes before serving; garnish with chopped green onions.
