  • 4 bell peppers
  • 4 cups fresh spinach
  • 1 tub ricotta cheese (15 oz)
  • 1 cup shredded mozzarella cheese
  • 2 large eggs
  • Fresh herbs (basil, parsley)
  • Olive oil
  • ½ cup breadcrumbs

Instructions

  1. Preheat oven to 400°F (204°C). Cut bell peppers in half lengthwise, remove seeds, and place on a parchment-lined baking sheet. Brush with olive oil and bake for 20 minutes.
  2. Meanwhile, microwave spinach until wilted. In a bowl, combine spinach, ricotta, mozzarella, eggs, herbs, and breadcrumbs; mix well.
  3. Remove peppers from the oven and drain excess water. Stuff each pepper generously with the filling.
  4. Mix breadcrumbs with olive oil; sprinkle over stuffed peppers.
  5. Return to oven at 350°F (176°C) for another 30 minutes until golden brown.
