  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • Taco seasoning packet (or homemade)
  • Hot honey

Instructions

  1. Preheat the oven to 400°F. Toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on a baking sheet and roast for 40–45 minutes, stirring halfway through.
  2. In a skillet over medium heat, heat remaining olive oil and sauté the diced onion until softened. Add ground beef along with taco seasoning; cook until browned.
