  • 1 pound ground chicken breast
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • ½ cup cherry tomatoes, quartered
  • ½ cup kalamata olives, chopped
  • ½ cup feta cheese (plus more for topping)
  • 3 bell peppers (halved and seeded)
  • 1 tablespoon extra virgin olive oil
  • ½ cup water
  • Fresh dill (for garnish)

Instructions

  1. Preheat oven to 350°F.
  2. Cook rice according to package instructions.
  3. Prepare bell peppers by slicing them in half and removing seeds; place cut side up in a baking dish.
  4. In a skillet over medium heat, add olive oil and cook ground chicken with salt and pepper until browned; drain excess liquid.
  5. Stir in Italian seasoning, onion, garlic, and zucchini; sauté for about two minutes until fragrant.
  6. Combine cooked rice with chicken mixture, cherry tomatoes, olives, feta cheese, and dill in a bowl.
  7. Stuff each pepper half generously with the filling; sprinkle more feta on top and pour water into the baking dish for steaming.
  8. Cover with foil and bake for 40-45 minutes; serve with fresh lemon juice squeezed over the top.
