  • 1 pound ground chicken breast
  • 3 bell peppers, halved and seeded
  • ½ teaspoon kosher salt
  • 1 teaspoon Italian seasoning
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • ½ cup cherry tomatoes, quartered
  • ½ cup kalamata olives, chopped
  • ½ cup feta cheese (divided)
  • Fresh dill (for garnish)

Instructions

  1. Preheat the oven to 350°F.
  2. Cook rice according to package instructions.
  3. Slice bell peppers in half, removing seeds and ribs; place cut-side up in a baking dish.
  4. In a skillet, heat olive oil over medium heat and cook ground chicken with salt and pepper until no longer pink.
  5. Stir in Italian seasoning, onion, garlic, and zucchini; cook for an additional 2 minutes.
  6. In a bowl, combine cooked rice with the chicken mixture along with tomatoes, olives, feta cheese, and dill.
  7. Generously stuff each pepper with the mixture; sprinkle extra feta on top.
  8. Add water to the baking dish for steaming; cover with foil and bake for 40–45 minutes until peppers are tender.
  9. Serve warm with lemon wedges.
